Oaty crumble tart
Elaine
Ingredients
8 oz plain flour
4 oz oats (any but NOT instant)
5 oz Butter
3 oz soft brown sugar
And the filling of your choice - Christmas mincemeat, fruity jam, apple, or whatever you have to hand!
First prepare a 9 inch square brownie tin by lining it with greaseproof paper.
Set the oven to 180 C
Weigh the dry ingredients into a basin and mix.
Melt the butter and sugar together in a defrost setting in the microwave, or in a pan.
Stir the melted mix into the dry mix and combine thoroughly. You should have a lovely crumbly mixture.
Scatter about 2/3 of the crumble into the tin, and press it down firmly to make the base.
Now spread a few spoonfuls of your filling - today I used apricot jam and a few snipped, dried apricots.
Sprinkle on the remaining crumble and again press firmly.
Bake for 20 minutes at 180º C and cut, when cooler, into 16 squares.
Lovely for tea, as a dessert with custard, or a with blob of cream.
