Tattie scones


 Made with left over potatoes, flour, butter and seasoning (salt) and fried on a griddle.

Mash potatoes with butter, add flour, and seasoning, to a consistency it can be rolled out into a circle. They should be thin enough to roll up when cooked. Fry both sides on a hot girdle or in a frying pan

Spread with butter and roll up. Stale ones can be fried for breakfast with bacon or egg.

Ingredients
1/2 lb sieved boiled potatoes
2 oz self raising flour (or less)
Pinch of salt
Use as little flour as possible

Method
Knead well. Roll out thinly on a floured board and bake quickly on a hot girdle.
