Pancakes

Anne Griffiths's recipe

Ingredients

8 ozs (250g) Plain Flour

1 teaspoon Cream of Tartar

1 teaspoon Baking Soda

3ozs (85g) Castor Sugar

2 Eggs beaten

1/2 pint  ( 300 ml)  Milk

1 oz (28g) melted Margarine or Butter


Method

Sift and mix dry ingredients together.

In another bowl add milk to eggs and beat.

Mix all together using a metal spoon.

Finally add the melted margarine.

Grease griddle or frying pan with a little margarine or oil and heat. (Make sure it is really hot - a griddle takes a while to heat through)

Drop spoonfuls of mixture on pan leaving space for expansion (on a square griddle 1 in each corner and 1 in the middle) By the time you've dropped 5, the first one should be ready to turn)

Carefully turn with a knife when bubbles appear on top.

Lift and place in clean folded tea cloth.

Golden syrup can be substituted for sugar giving them a richer taste.

Serve with butter and jam.
