Scones

This is another versatile recipe. You can add dried fruits or cherries, or cheese and mustard for a savoury treat as well as those listed below.  They are so quick and easy to make that they were often produced for a farm tea when hungry lads came in from the fields.
As usual, the recipe can be adapted to fit whatever ingredients you have to hand, but are all based on flour, fat, milk to bind and a raising agent.








Oven Scones


Ingredients
8 oz S R flour
1 rounded teaspoon baking powder
1/2 level teaspoon salt
1 to 2 tablespoons of caster sugar
2 oz butter or margarine
1/4 pint  liquid - add an egg if liked to milk, or buttermilk 
Method
Sift dry ingredients and rub in fat. Stir in the liquid to form a soft but not sticky dough.
Roll out to about 1/2 inch thickness and cut into scones with a knife or cutter. Brush with milk, but don't let it dribble down the sides as this will impede the rising.
Bake in a hot oven - 205C for ten to fifteen minutes.



Potato Scones

Ingredients
1/2 lb sieved boiled potatoes
2 oz self raising flour (or less)
Pinch of salt
Use as little flour as possible

Method
Knead well. Roll out thinly on a floured board and bake quickly on a hot girdle.

Treacle scones
Ingredients
8 oz S R flour
1 1/2 oz butter
1 oz sugar
1 teaspoon baking powder
A pinch of ground ginger
Pinch of salt
1 scant tablespoon of treacle
milk to mix

Method
Rub the butter into the dry ingredients, add treacle and mix to a soft but not sticky dough.
Turn out onto a floured board, roll out fairly thick and cut with a knife or cutter into scones. This mixture spreads slightly so space out onto a lightly greased baking tray and bake for 10 to 15 minutes in a hot oven - 205C

Girdle scones
3 cups SR flour.
Quarter teaspoon baking soda.  
1 Tablespoon syrup. 
Dessert spoonful cooking oil.    
Add milk and mix.

Put onto floured surface roll out, divid into 2 and cut into four.

This makes 8 scones.

Treacle scones the same but use treacle instead of syrup
